Lola’s Spices Caribbean Salmon

 

1 Lb  Salmon 

2 tsp Lola’s Spices Caribbean Blend

1 tsp EVOO 


Preheat oven to 400 F, drizzle Salmon with EVOO and generously sprinkle Lola’s Spices CB on both sides. On a sheet pan, drizzle with EVOO and place seasoned Salmon skin-side down. Place in oven on middle center rack and cook for 8 to 10 mins or until desired doneness. It is recommended to cook salmon to the internal temperature reaches 125 -130 F. 

 

Suggested side:  Zesty Riced Cauliflower 

 

1.5 Cup Riced Cauliflower

1 Tbl Water 

1/2 juice of Lemon,  plus 1 tsp Zest 

1 Tbl Fresh Parsley *finely chopped

1 tsp EVOO 

1 tsp Butter 

Salt and pepper *to taste 

 

Over medium heat, in a pan with lid add EVOO, Cauliflower, water, and stir then cover for 3 mins.  Remove lid and add Butter, Parsley, Lemon juice and zest, and salt and pepper and cook for another 3 mins or until desired tenderness.
