Black Cod (Sablefish)
Wild caught along the northern Pacific coast. Richly flavored with a high oil content and satiny texture. Highly valued for its buttery flavor and delicate texture, often called butterfish in some markets. The flesh is white with large but fine flakes.
A delicate and high value fish, Sablefish is best with refined cooking methods like butter poaching, searing, baking and steaming. Grilling is an option if wrapped in a foil pouch that allows the valuable fish to retain its moistness and texture. Pairs well with white wine and light sauces that will not overpower the delicate, buttery flavor.
