Originally from the Nile River area, Tilapia’s current popularity means it is now found in warm waters around the world, particularly in Costa Rica and the Southwestern United States. They are colorful fish, ranging between 1 to 2 pounds, and come in red, green, and black and white striped varieties. Tilapia are slightly firm and a little flaky. Their flesh is mildly sweet and pale with pink tones that turn snow white when cooked. Tilapia can be prepared many ways, with baking, broiling, sautéing, and steaming being the most common.
