Found in tropic waters all around the world, Wahoo are scombrid fish related to mackerels, tuna and bonito. Their elongated bodies can grow up to 8 feet long and weigh as much as 183 lbs. Other characteristics are vibrant blue vertical blue stripes and a mouth full of razor sharp teeth. A highly prized sport fish, they are also excellent to eat.
Although a versatile fish, wahoo benefits from cooking methods suitable for species with low fat content so the meat doesn’t dry out when cooking. It cooks and tastes like an ultra-light, lean tuna. The firm flesh is good grilled or broiled, especially if marinated first to tenderize it and enhance the mild flavor.
