Surf & Turf - Fresh Fish Fast

Ingredients:

  • 2 Tablespoons Duck Fat
  • 2 Olive Oil
  • 4 Cloves of Garlic
  • 2 Sprigs Rosemary
  • 2 Sprigs Thyme
  • Salt & Pepper
  • 2 Ribeye Steaks
  • 1 Pair Of Split Lobster Tails
  • Blue Crab Bay Garlic Herb Seasoning
  • 1 Groomer’s Grilling Wood Plank

Cooking Directions:

  1. Pre heat your oven to 270 degrees while you allow your steak to reach room temperature.
  2. Heat a large Cast iron skillet with 3 – 4 tablespoons of olive oil.
  3. Once your steak is at room temperature and your skillet is very hot, season generously with salt and pepper then place the steak in the pan away from your body.
  4. Sear for 3-5 minutes on each side then remove skillet from stove top and place in your pre-heated oven for about 7 minutes.
  5. Remove the cast iron skillet from the oven and add duck fat, garlic, & herbs into the pan, tilting the pan to baste the steak for about 2 mins and then sprinkle Blue Crab Bay.
  6. Pull the steak off and place your steak to rest on a cutting board.
  7. Place your split lobster tails on your pre soaked Groomers Grilling Wood Plank (pro tip, place a skewer into the tail to keep them from curling), then brush on some duck fat and sprinkle on Blue Crab Bay seasoning.
  8. Place into the oven @ 280 degrees for 10 minutes or until tail is bright red and meat is thoroughly cooked.
  9. Pair with your favorite vegetable (or not)!
