Lola's Spices Caribbean Grilled Cobia and Summer Vegetables 


1 Lb Cobia (4 oz to 6 oz portions) 

2 tsp Lola’s Spices Cajun Blend 

1 TB Olive Oil


Preheat grill to 350 F, drizzle Cobia with Olive Oil, and liberally sprinkle Lola’s Spices Caribbean blend on both sides. Place over indirect heat on the grill for 3 mins and flip for a total of 6 to 8 minutes or until Cobia is fully cooked.  Alternatively, Cobia can be cooked in the oven.

Serving Suggestion:  Grilled Vegetables with Balsamic 

1 Zucchini *1/4 in slices 

1 Yellow Squash  *1/4 in slices

1 Bell papers *1 in squares 

1 Red onion *1/4 in slices

1/2 cup Olive Oil . 

1/4 Cup Balsamic Vinegar 

1 Tbl finely chopped Italian Parsley 

Salt and pepper to taste 


Drizzle vegetables in Olive Oil and sprinkle with salt and pepper on both sides. Place vegetables directly on grill grates or skewer and grill for 3 to 5,  flip once until fully cooked and desired grill marks. Remove from grill and prepare the dressing.  Dressing: Add remaining Olive Oil, Balsamic, parsley and stir vigorously.  Drizzle over vegetables, toss and serve.
