Lola's Spices Cajun Poached Grouper and Couscous 

 

1 Lb Grouper (4 oz to 6 oz portions) 

1 Tbl  Lola’s Spices Cajun Blend 

1 TB Olive Oil

1- 15 oz Canned Tomatoes *chopped

1/2 cup Onion *chopped

2 cloves Garlic *minced

1 Tbl Flat leaf Parsley *chopped

1 tsp salt

 

Drizzle Olive oil over Grouper filets and sprinkle 1 tsp Lola’s Spices Cajun blend on both sides and set aside.  Reserve the rest of the Olive oil and Cajun spice for poaching mixture. 

 

In a pan over medium heat, add Olive oil, chopped onions, garlic, salt and cook for 3 mins.  Next, add can of tomatoes, remaining Lola’s Spices Cajun blend, parsley, and cook and additional 3 to 5 mins. Finally, nestle fish into mixture, cover and cook for 8 to 10 mins or until fish is throughly cooked. 

 

Serving Suggestion:  Couscous *follow directions on your packaging
